5 Days of Potatoes and Intermittent Fasting

I often say that my body does not handle processed foods well. I feel like the people who know me in real life probably roll their eyes internally when I say such things. Or at least, they very politely do it behind my back.

But, after the first five days of all potatoes, all the time, I’ve lost 6.3 lbs on the scale. That’s ridiculous, right? Right?

The proof is in the pudding — er, potatoes.

We call this ‘water weight,’ and yes, I’m sure it’s partly that. But I’ve still been salting my potatoes. (I learned a few summers ago to not give up salt entirely, because fainting is a thing that can happen, if you already have low blood pressure and consume no sodium.) It’s going to sound like a conspiracy theory, but it’s really quite likely that processed food is secretly poisoning us all and causing systemic inflammation in our bodies. But that’s a post for another day.

Last night’s dinner: Mashed Yukon Golds, with some cashew milk and nutritional yeast.

Another thing I’ve been doing for a while now is intermittent fasting, and it honestly does make me  feel better. The version that I follow is that I try to keep all my meals (not counting plain coffee and herbal tea) between roughly 11am and 7pm. This leaves me with a “fasting window” of 16 hours, also known in IF circles as “16:8.” You can read more about it here, though I realize it is not for everyone — especially if you have health issues. Obviously, you should always consult your doctor.

I have not changed any other part of my lifestyle. I get my thirty minutes of cardio in every morning, because my Apple watch guilts me if I don’t—and guilt is a powerful motivator—but I haven’t been doing anything extra in terms of working out.

Such a happy moment when all the rings close!

Since I’m not bored of potatoes yet, I’m going to continue on as planned.

I’ll update again soon.
